Homemade Chocolate Recipes

Homemade chocolate is very satisfying. You can alter the amount of sweetener to suit your taste buds. You can also alter the amount of cocoa powder. These recipes are guides but you can experiment to find what works best for you. I like to use raw cacao powder from www.UltimateSuperfoods.com. You can also get raw cacao butter there. I have used the organic cacao butter from www.NutsOnline.com and it works great, too.

Maple Syrup Chocolate

Yum! Get ready for a great chocolate treat.

1/2 cup cacao butter
1/4 cup raw cacao powder
1/2 cup maple syrup
If you have a double boiler, use it to melt the cacao butter. If not, I put a glass pyrex measuring container in a saucepan of hot water. I turn the heat on low and let it melt. It takes a few minutes to melt, but it is best to let it melt slowly so it doesn't destroy the raw properties of the butter and powder.
After the cacao butter is melted, take it off of the heat. Pour in the maple syrup and stir. Pour in the cacao powder and stir. The chocolate will be very runny. Put a piece of wax paper down on a flat dish. Pour the chocolate into the dish and put it in the freezer. The chocolate will harden slowly. As it hardens the maple syrup will come out the bottom.
Take the hardened chocolate off of the maple syrup wax paper and put it on another flat dish with wax paper. Put it back in the freezer and save the maple syrup for pancakes.
The chocolate must be kept in the freezer or refrigerator. It will soften if left out and lose that yummy chocolate texture. This is a very rich chocolate and very mood boosting.
